I've now committed to svn for 0.8 an updated INSTALL.macosx which
explains how to go about building universal binaries on OS X with
ClanLib-0.8. I've also pre-built the required frameworks as
universals and they are all available here:

The process is pretty painless now (as long as you have the pre-built
universal frameworks) and it's quite cool to see it in action. :-)
For future reference, I've created simple Xcode project files for
libpng and libjpeg that build them as private frameworks suitable for
ClanLib (and probably other things). I've posted that info here:
